You can make a mantle out of them and put in on to any armour with the same effect as old wolfpelt armor had. Besides that and a dog collar, they can be also used in crafting large quiver if I remember correct. The recipe list I just looked up says that Unhold skins are used for the quiver. Haven't tested yet.
